Pasta Chicken Pesto
This one-pan dish is perfect for making in your camper! And such a delight to make during spring.
Garlic chicken pesto pasta is a delicious and flavorful dish that combines tender chicken, al dente pasta, and a savoury pesto sauce. The garlic adds a rich and aromatic flavour to the dish, while the chicken provides a juicy and meaty texture. The pesto sauce perfectly complements the chicken and pasta.
You can cook the pasta beforehand or while you’re making the sauce, depending on the number of cookers you have. We use creme fraiche instead of heavy cream because that was easier to find in Europe while on the road with our motorhome.
The dish is not only delicious but also healthy, as it contains a good balance of protein, carbs, and healthy fats.

Salmon Wrap Pizza

This recipe is an adaptation of the Pan Pizza with Salmon that CamperKeuken made (recipe in Dutch).
The wrap pizza with salmon is a unique, flavourful dish made easily by using the wrap as the crust. This light texture complements the lightness of the smoked salmon perfectly. The salmon, rich in omega-3 fatty acids, adds a slightly sweet buttery flavour to the dish, making it a healthy and delicious choice.
We have made this recipe a few times with fewer ingredients. We use big wraps and add creme fraiche, diced (small) tomatoes, red onion, and capers. Add a bit of pepper, salt and lemon juice before it goes into the pan.
Let it simmer with a lid for a few minutes, and your pizza is done. We prepare several at once and then let the new one go into the pan as we got one out to eat.
These wrap pizzas are light and fresh and perfect for spring and summer!

Open Lasagna
Making lasagna is hard in a motorhome, even if you have an oven. But open lasagna is delicious and has the same feel while being a lot easier to make on the road.
We’ve made several versions of open lasagna while travelling. Our favourite might be with spinach, tomato sauce and ricotta. But this asparagus and mint version is the perfect version for spring!
The pasta sheets are cooked al dente and provide a soft and chewy texture that is complemented by the crispy and slightly sweet asparagus spears. The fresh mint and lemon add a zesty and refreshing note that cuts through the richness of the ricotta sauce, creating a bright and balanced flavour profile.
This dish’s combination of flavours and textures is simply irresistible, making it a perfect choice for a special occasion or a weekend treat.

Gyros wrap
This is one of our all-time favourites! It is quick, easy, and so absolutely delicious! It is an adaptation of this Wraps with Gyros (in Dutch) recipe, where we just add everything together.
These wraps with gyros, feta, and olives are a delicious and flavorful combination of tender meat, tangy cheese, and savoury olives. The grilled meat is complemented by the tangy feta cheese and the salty olives. The wrap itself is soft and chewy, providing a perfect vessel to hold all the delicious fillings together. The combination of these ingredients creates a complex and rich flavour profile that is both satisfying and addictive.
We make our wraps with Greek yoghurt, some lettuce, some red onion and diced small tomatoes. We bake diced pork meat in a pan, adding some gyros herbs and baking until it is done. We then add that to the wrap and add some olives and feta. If you want, you could also add cucumber. And our quick and spring-like wrap is done!

Creamy Mushroom Zucchini Pasta
I’ve been making different versions of this creamy mushroom zucchini pasta for over 20 years now, and it’s one of my all-time favourite recipes! I started making it as a student, quickly becoming a staple in my cooking repertoire. Nowadays, it’s become my go-to recipe for camping trips because it’s so easy to make and always hits the spot.
Creamy mushroom zucchini pasta is a rich and indulgent dish that offers a delightful combination of earthy mushroom flavour and fresh zucchini taste. The pasta is cooked to al dente perfection, providing a soft and chewy texture that is complemented by tender and juicy mushrooms. The zucchini adds a slightly sweet and fresh taste that balances the creamy sauce’s richness.
While the recipe is already delicious on its own, we like to mix things up by adding diced ham to the dish for a heartier meal. Of course, if you prefer to keep things vegetarian, it’s just as great without the ham.
One thing I always do is skip the sherry, and the dish still turns out incredibly tasty. It’s amazing how one recipe can be so versatile and customizable to suit different preferences and dietary needs.
Overall, if you’re looking for a comforting and satisfying meal that’s easy to make and perfect for camping, this creamy mushroom zucchini pasta recipe is the way to go.
